Description

Rich and creamy mashed potatoes loaded with crispy bacon, sharp cheddar cheese, and green onions for a hearty and flavorful side dish.


Ingredients

  • 2 lbs Russet or Yukon Gold potatoes, peeled and cubed
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup sour cream
  • 1/3 cup whole milk (warm)
  • 3 tbsp unsalted butter
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, sliced
  • Salt and black pepper, to taste


Instructions

  1. Place potatoes in a large pot, cover with cold salted water, and bring to a boil.
  2. Reduce heat and simmer 15–20 minutes until potatoes are fork-tender. Drain well.
  3. Return potatoes to the pot and mash until smooth.
  4. Stir in butter, sour cream, and warm milk until creamy.
  5. Fold in cheddar cheese, crumbled bacon, and green onions.
  6. Season with salt and black pepper to taste.
  7. Serve hot, garnished with extra cheese, bacon, and green onions if desired.

Notes

  • For a smoother texture, use a potato ricer.
  • Swap cheddar with smoked gouda or Monterey Jack for variation.
  • Can be made ahead and reheated in the oven with extra cheese on top.
