Description
Rich and creamy mashed potatoes loaded with crispy bacon, sharp cheddar cheese, and green onions for a hearty and flavorful side dish.
Ingredients
- 2 lbs Russet or Yukon Gold potatoes, peeled and cubed
- 4 slices bacon, cooked and crumbled
- 1/2 cup sour cream
- 1/3 cup whole milk (warm)
- 3 tbsp unsalted butter
- 1 cup shredded sharp cheddar cheese
- 2 green onions, sliced
- Salt and black pepper, to taste
Instructions
- Place potatoes in a large pot, cover with cold salted water, and bring to a boil.
- Reduce heat and simmer 15–20 minutes until potatoes are fork-tender. Drain well.
- Return potatoes to the pot and mash until smooth.
- Stir in butter, sour cream, and warm milk until creamy.
- Fold in cheddar cheese, crumbled bacon, and green onions.
- Season with salt and black pepper to taste.
- Serve hot, garnished with extra cheese, bacon, and green onions if desired.
Notes
- For a smoother texture, use a potato ricer.
- Swap cheddar with smoked gouda or Monterey Jack for variation.
- Can be made ahead and reheated in the oven with extra cheese on top.
