Description

A hearty and satisfying breakfast or brunch dish featuring baked potatoes filled with eggs, cheese, and herbs.


Ingredients

  • 4 large russet potatoes
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons butter
  • 2 green onions, sliced
  • Salt and black pepper to taste
  • Fresh parsley or chives for garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash potatoes and pierce them several times with a fork. Bake for 45-60 minutes until tender.
  3. Remove potatoes from the oven and let cool slightly. Cut the top off each potato and scoop out some of the flesh, leaving enough to form a shell.
  4. Add a small amount of butter and shredded cheese into each potato shell.
  5. Crack an egg into each potato. Season with salt and pepper.
  6. Return potatoes to the oven and bake for 12-15 minutes, or until eggs are set to your liking.
  7. Sprinkle with green onions and fresh parsley or chives before serving.

  • You can add cooked bacon, ham, or sautéed vegetables for extra flavor.
  • Adjust baking time depending on how runny you prefer the yolks.
