Description

Bang Bang Chicken Fried Rice is a flavorful and slightly spicy dish combining tender chicken, fluffy rice, and a creamy sweet chili sauce that delivers a bold, satisfying taste.


Ingredients

  • 2 cups cooked jasmine rice (preferably day-old)
  • 2 chicken breasts, diced
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1/2 cup frozen peas and carrots
  • 3 cloves garlic, minced
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)


Instructions

  1. In a small bowl, mix mayonnaise, sweet chili sauce, and sriracha to make the bang bang sauce. Set aside.
  2. Heat 1 tablespoon of oil in a large pan or wok over medium-high heat. Cook the diced chicken until fully cooked and golden. Remove and set aside.
  3. In the same pan, add remaining oil and scramble the eggs. Remove and set aside.
  4. Add garlic and sauté until fragrant, then add peas and carrots and cook for 2-3 minutes.
  5. Add cooked rice, breaking up any clumps, and stir-fry for 3-4 minutes.
  6. Return chicken and eggs to the pan. Add soy sauce and sesame oil, mixing well.
  7. Stir in the prepared bang bang sauce and toss until everything is evenly coated.
  8. Garnish with chopped green onions and serve hot.

Notes

  • Use cold, day-old rice for best texture.
  • Adjust spice level by reducing or increasing sriracha.
  • You can substitute chicken with shrimp or tofu.
  • Add extra vegetables like bell peppers or broccoli for more nutrition.
