Description
Bang Bang Chicken Fried Rice is a flavorful and slightly spicy dish combining tender chicken, fluffy rice, and a creamy sweet chili sauce that delivers a bold, satisfying taste.
Ingredients
- 2 cups cooked jasmine rice (preferably day-old)
- 2 chicken breasts, diced
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 1/2 cup frozen peas and carrots
- 3 cloves garlic, minced
- 3 green onions, chopped
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
Instructions
- In a small bowl, mix mayonnaise, sweet chili sauce, and sriracha to make the bang bang sauce. Set aside.
- Heat 1 tablespoon of oil in a large pan or wok over medium-high heat. Cook the diced chicken until fully cooked and golden. Remove and set aside.
- In the same pan, add remaining oil and scramble the eggs. Remove and set aside.
- Add garlic and sauté until fragrant, then add peas and carrots and cook for 2-3 minutes.
- Add cooked rice, breaking up any clumps, and stir-fry for 3-4 minutes.
- Return chicken and eggs to the pan. Add soy sauce and sesame oil, mixing well.
- Stir in the prepared bang bang sauce and toss until everything is evenly coated.
- Garnish with chopped green onions and serve hot.
Notes
- Use cold, day-old rice for best texture.
- Adjust spice level by reducing or increasing sriracha.
- You can substitute chicken with shrimp or tofu.
- Add extra vegetables like bell peppers or broccoli for more nutrition.
