Description
A comforting and hearty beef noodle casserole made with ground beef, egg noodles, tomato sauce, and cheese. Perfect for a family-friendly dinner.
Ingredients
- 12 oz egg noodles
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) tomato sauce
- 1 can (14.5 oz) diced tomatoes
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup sour cream
- 1 cup cottage cheese
- 2 cups shredded cheddar cheese
- 2 tbsp olive oil
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Cook egg noodles according to package directions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
- Add ground beef and cook until browned, draining excess fat if needed.
- Stir in tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 10 minutes.
- In a medium bowl, mix sour cream and cottage cheese until combined.
- Layer half of the cooked noodles in the prepared dish. Spread half of the sour cream mixture on top, followed by half of the meat sauce. Sprinkle with 1 cup of shredded cheddar.
- Repeat layers with remaining noodles, sour cream mixture, meat sauce, and cheese.
- Bake uncovered for 25–30 minutes, until cheese is melted and bubbly.
- Let rest for 5 minutes before serving.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- Make ahead and refrigerate for up to 2 days before baking.
- Add extra veggies like bell peppers or zucchini for more nutrition.
