Description
A classic Russian-inspired comfort dish made with tender strips of beef, mushrooms, and onions simmered in a creamy sour cream sauce, traditionally served over egg noodles or rice.
Ingredients
- 1 1/2 lbs beef sirloin or tenderloin, thinly sliced into strips
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 tbsp all-purpose flour
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1 cup sour cream
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Cooked egg noodles or rice, for serving
Instructions
- Season beef strips with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear beef in batches for 1–2 minutes until browned but not fully cooked. Remove and set aside.
- In the same skillet, melt butter and sauté onions and garlic for 2–3 minutes until softened. Add mushrooms and cook until browned.
- Sprinkle flour over vegetables and stir for 1 minute.
- Slowly pour in beef broth, stirring constantly until sauce begins to thicken.
- Add Worcestershire sauce and Dijon mustard, then return beef to the skillet. Simmer for 5 minutes.
- Reduce heat to low and stir in sour cream until creamy and smooth. Do not boil after adding sour cream.
- Taste and adjust seasoning with salt and pepper.
- Serve hot over egg noodles or rice, garnished with parsley.
Notes
- For extra richness, use heavy cream along with sour cream.
- Do not overcook beef — sear quickly to keep it tender.
- Can substitute chicken or turkey for a lighter version.
