Description

A classic Russian-inspired comfort dish made with tender strips of beef, mushrooms, and onions simmered in a creamy sour cream sauce, traditionally served over egg noodles or rice.


Ingredients

  • 1 1/2 lbs beef sirloin or tenderloin, thinly sliced into strips
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 cup sour cream
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked egg noodles or rice, for serving


Instructions

  1. Season beef strips with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear beef in batches for 1–2 minutes until browned but not fully cooked. Remove and set aside.
  3. In the same skillet, melt butter and sauté onions and garlic for 2–3 minutes until softened. Add mushrooms and cook until browned.
  4. Sprinkle flour over vegetables and stir for 1 minute.
  5. Slowly pour in beef broth, stirring constantly until sauce begins to thicken.
  6. Add Worcestershire sauce and Dijon mustard, then return beef to the skillet. Simmer for 5 minutes.
  7. Reduce heat to low and stir in sour cream until creamy and smooth. Do not boil after adding sour cream.
  8. Taste and adjust seasoning with salt and pepper.
  9. Serve hot over egg noodles or rice, garnished with parsley.

Notes

  • For extra richness, use heavy cream along with sour cream.
  • Do not overcook beef — sear quickly to keep it tender.
  • Can substitute chicken or turkey for a lighter version.
