Description

These BLTA Chicken Salad Lettuce Wraps are a fresh and flavorful twist on the classic sandwich — combining crispy bacon, juicy chicken, ripe avocado, and tomatoes, all wrapped in crisp lettuce leaves. Perfect for a light lunch or low-carb meal option.


Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 4 slices bacon, cooked and crumbled
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, quartered
  • 1/4 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1 tbsp lemon juice
  • Salt and black pepper, to taste
  • 8 large butter lettuce or romaine leaves


Instructions

  1. In a large mixing bowl, combine cooked chicken, bacon, avocado, and cherry tomatoes.
  2. In a small bowl, whisk together mayonnaise, lemon juice, salt, and pepper until smooth.
  3. Pour the dressing over the chicken mixture and gently toss to combine, being careful not to mash the avocado.
  4. Lay out lettuce leaves and spoon the chicken salad mixture evenly into the center of each leaf.
  5. Fold or roll the lettuce around the filling to form wraps and serve immediately.

Notes

  • For extra crunch, add chopped celery or cucumber to the mix.
