Ingredients
- 2 cups cooked chicken breast, shredded or diced
- 4 slices bacon, cooked and crumbled
- 1 avocado, diced
- 1/2 cup cherry tomatoes, quartered
- 1/4 cup mayonnaise (or Greek yogurt for a lighter option)
- 1 tbsp lemon juice
- Salt and black pepper, to taste
- 8 large butter lettuce or romaine leaves
Instructions
- In a large mixing bowl, combine cooked chicken, bacon, avocado, and cherry tomatoes.
- In a small bowl, whisk together mayonnaise, lemon juice, salt, and pepper until smooth.
- Pour the dressing over the chicken mixture and gently toss to combine, being careful not to mash the avocado.
- Lay out lettuce leaves and spoon the chicken salad mixture evenly into the center of each leaf.
- Fold or roll the lettuce around the filling to form wraps and serve immediately.
Notes
- For extra crunch, add chopped celery or cucumber to the mix.
- Use rotisserie chicken for quick prep.
- Best served fresh, but the chicken mixture can be refrigerated (without lettuce) for up to 2 days.
