Cheddar-Crusted Ground Beef and Rice Casserole is a hearty, family-friendly comfort dish made with seasoned ground beef, tender rice, and a creamy sauce, all topped with a golden, bubbly cheddar cheese crust.


Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain white rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh parsley (optional, for garnish)


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3–4 minutes.
  3. Add garlic and ground beef. Cook until beef is browned and fully cooked, breaking it apart as it cooks. Drain excess fat.
  4. Stir in uncooked rice, beef broth, cream of mushroom soup, sour cream, salt, pepper, and paprika. Mix well to combine.
  5. Transfer the mixture to the prepared baking dish and spread evenly.
  6. Cover tightly with foil and bake for 30–35 minutes, or until rice is tender and liquid is absorbed.
  7. Remove foil, sprinkle 1 1/2 cups cheddar cheese evenly over the top.
  8. Return to oven uncovered and bake for an additional 10–15 minutes, until cheese is melted and golden.
  9. Let casserole rest for 5–10 minutes before serving. Garnish with chopped parsley if desired.
