Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked long-grain white rice
- 2 cups beef broth
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup sour cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 1/2 cups shredded sharp cheddar cheese, divided
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3–4 minutes.
- Add garlic and ground beef. Cook until beef is browned and fully cooked, breaking it apart as it cooks. Drain excess fat.
- Stir in uncooked rice, beef broth, cream of mushroom soup, sour cream, salt, pepper, and paprika. Mix well to combine.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Cover tightly with foil and bake for 30–35 minutes, or until rice is tender and liquid is absorbed.
- Remove foil, sprinkle 1 1/2 cups cheddar cheese evenly over the top.
- Return to oven uncovered and bake for an additional 10–15 minutes, until cheese is melted and golden.
- Let casserole rest for 5–10 minutes before serving. Garnish with chopped parsley if desired.
