Ingredients
- 1 lb boneless, skinless chicken breast, diced
- 1 cup uncooked orzo pasta
- 2 cups broccoli florets
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 tsp paprika
- Salt, to taste
- Black pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken, season with salt, pepper, and paprika, and cook until lightly browned and cooked through. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant.
- Add uncooked orzo and stir for 1 minute to lightly toast.
- Pour in chicken broth and bring to a gentle simmer.
- Cook for 8–10 minutes, stirring occasionally, until the orzo is nearly tender.
- Add broccoli florets and cook for 3–4 minutes until tender.
- Reduce heat to low and stir in heavy cream.
- Add cheddar and Parmesan cheese, stirring until melted and creamy.
- Return the cooked chicken to the skillet and mix well.
- Taste and adjust seasoning as needed, then serve warm.
Notes
- You can substitute chicken thighs for extra juiciness.
- Add red pepper flakes for a spicy kick.
- If the sauce thickens too much, add a splash of broth or milk.
