Ingredients

  • 1 lb boneless, skinless chicken breast, diced
  • 1 cup uncooked orzo pasta
  • 2 cups broccoli florets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp paprika
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken, season with salt, pepper, and paprika, and cook until lightly browned and cooked through. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds until fragrant.
  4. Add uncooked orzo and stir for 1 minute to lightly toast.
  5. Pour in chicken broth and bring to a gentle simmer.
  6. Cook for 8–10 minutes, stirring occasionally, until the orzo is nearly tender.
  7. Add broccoli florets and cook for 3–4 minutes until tender.
  8. Reduce heat to low and stir in heavy cream.
  9. Add cheddar and Parmesan cheese, stirring until melted and creamy.
  10. Return the cooked chicken to the skillet and mix well.
  11. Taste and adjust seasoning as needed, then serve warm.

Notes

  • You can substitute chicken thighs for extra juiciness.
  • Add red pepper flakes for a spicy kick.
  • If the sauce thickens too much, add a splash of broth or milk.
