Description
A rich, creamy, and cheesy corn casserole made with cream cheese, cheddar, and sweet corn for the ultimate comforting side dish.
Ingredients
- 2 cans (15 oz each) whole kernel corn, drained
- 1 can (15 oz) creamed corn
- 8 oz cream cheese, softened and cubed
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 tbsp unsalted butter
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C). Grease a medium baking dish.
- In a saucepan over medium heat, melt the butter and add the cream cheese, stirring until smooth and fully melted.
- Add the sour cream, garlic powder, onion powder, salt, and pepper. Mix until combined.
- Stir in the drained whole kernel corn and the creamed corn.
- Pour the mixture into the prepared baking dish and top with shredded cheddar cheese.
- Bake for 25–30 minutes, or until the casserole is bubbly and the cheese is melted and slightly golden.
- Let cool for 5 minutes before serving.
Notes
- Use pepper jack cheese for a spicier version.
- Frozen corn can be substituted for canned corn.
- For a firmer casserole, add 1 beaten egg before baking.
