Cheesy Ground Beef Rice Casserole is a hearty, family-friendly baked dish made with seasoned ground beef, tender rice, and plenty of melted cheese in a creamy sauce.
Ingredients
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked long-grain rice
- 2 cups beef broth
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup milk
- 2 cups shredded cheddar cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- Optional: chopped parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
- Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned.
- Add onion and garlic to the beef and sauté until softened. Drain excess fat.
- In a large bowl, combine cooked beef mixture, uncooked rice, beef broth, cream of mushroom soup, milk, salt, pepper, and paprika.
- Transfer the mixture to the prepared casserole dish and spread evenly.
- Cover tightly with foil and bake for 45 minutes.
- Remove foil, sprinkle shredded cheddar cheese evenly on top.
- Return to the oven uncovered and bake for an additional 15 minutes until cheese is melted and bubbly.
- Let rest for 5–10 minutes before serving. Garnish if desired.

- Use pre-cooked rice to reduce baking time.
- You can substitute ground turkey for a lighter version.
- Add vegetables like peas or bell peppers for extra nutrition.
