Description

A hearty and comforting cheesy hamburger potato soup made with ground beef, tender potatoes, and a creamy cheese base, perfect for chilly nights.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 4 medium potatoes (peeled and diced)
  • 3 cups chicken or beef broth
  • 2 cups milk
  • 2 tbsp all-purpose flour
  • 2 tbsp unsalted butter
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 carrots (diced)
  • 2 celery stalks (diced)
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • Chopped green onions or parsley for garnish


Instructions

  1. In a large pot, heat olive oil and cook ground beef until browned. Drain excess fat and set aside.
  2. In the same pot, melt butter and sauté onion, carrots, celery, and garlic until softened.
  3. Stir in flour and cook for 1–2 minutes to form a roux.
  4. Gradually whisk in broth and milk, stirring until smooth.
  5. Add potatoes, paprika, thyme, salt, and pepper. Simmer for 15–20 minutes until potatoes are tender.
  6. Return cooked ground beef to the pot and stir well.
  7. Reduce heat and stir in shredded cheddar cheese until melted.
  8. Stir in sour cream for extra creaminess.
  9. Serve hot, garnished with green onions or parsley.

Notes

  • Use sharp cheddar for a stronger cheese flavor.
  • For a thicker soup, mash some of the potatoes before adding the cheese.
  • This soup can be made ahead and reheated, but stir in sour cream just before serving.
