Description

Cheesy Mashed Potato Puffs are fluffy, golden bites made with mashed potatoes, cheese, and eggs baked into muffin tins until crispy on the outside and soft inside. A perfect snack, appetizer, or side dish.


Ingredients

  • 2 cups mashed potatoes (leftover or freshly made)
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sour cream
  • 2 tbsp chopped chives or green onions
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray (for greasing muffin tin)


Instructions

  1. Preheat oven to 400°F (200°C). Grease a mini muffin tin with cooking spray.
  2. In a large bowl, combine mashed potatoes, eggs, cheddar, Parmesan, sour cream, chives, garlic powder, salt, and pepper. Mix until smooth.
  3. Spoon the mixture into the muffin cups, filling each about 3/4 full.
  4. Bake for 20–25 minutes, or until the tops are golden brown and slightly crispy.
  5. Let cool in the pan for 5 minutes before removing. Serve warm.

Notes

  • Best made with cold leftover mashed potatoes for easier handling.
  • Try adding bacon bits, jalapeños, or different cheeses for variations.
  • Serve with sour cream or ranch dipping sauce for extra flavor.
