Description

Chicken and Potato Bake is a comforting oven-baked dish made with tender chicken pieces, seasoned potatoes, garlic, and herbs roasted together until golden and flavorful.


Ingredients

  • 600 g chicken thighs or breast, cut into pieces
  • 500 g potatoes, peeled and cubed
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon chili flakes (optional)
  • 1 small onion, sliced
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large bowl combine potatoes, olive oil, garlic, paprika, thyme, oregano, salt, black pepper, and chili flakes.
  3. Add the chicken pieces and toss everything together until evenly coated with the seasoning.
  4. Transfer the mixture to the prepared baking dish and spread evenly.
  5. Add sliced onions and pour chicken broth over the mixture.
  6. Cover the dish with foil and bake for 30 minutes.
  7. Remove the foil, sprinkle Parmesan cheese if using, and bake for another 20–25 minutes until the chicken is cooked through and the potatoes are tender and golden.
  8. Garnish with chopped parsley and serve hot.

Notes

  • Bone-in chicken thighs provide more flavor and stay juicy during baking.
  • You can add carrots or bell peppers for extra vegetables.
  • For crispier potatoes, broil for the last 3–5 minutes.
  • Serve with a fresh green salad or steamed vegetables.
