Description

These Chicken Avocado Ranch Burritos are packed with juicy grilled chicken, creamy avocado, crisp lettuce, melty cheese, and zesty ranch dressing — all wrapped in a warm tortilla and grilled to golden perfection for the ultimate easy, flavor-packed meal.

Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 1 ripe avocado, diced
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup red onion, finely chopped (optional)
  • 1 tablespoon fresh lime juice
  • 4 large flour tortillas (10-inch)
  • 1 tablespoon olive oil or butter (for grilling)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cooked chicken, diced avocado, ranch dressing, lime juice, salt, and pepper. Toss gently to coat evenly.
  2. Warm the flour tortillas in a dry skillet or microwave until soft and pliable.
  3. On each tortilla, layer shredded cheese, lettuce, tomatoes, and the chicken-avocado mixture. Sprinkle with a bit of red onion if using.
  4. Fold in the sides of each tortilla and roll it tightly into a burrito.
  5. Heat olive oil or butter in a skillet over medium heat. Place the burritos seam-side down and cook for 2–3 minutes per side, until golden and crispy.
  6. Cut in half and serve warm with extra ranch dressing or salsa on the side.

Notes

  • Use rotisserie chicken for a quick and flavorful shortcut.
  • For extra flavor, add cooked bacon bits or a drizzle of hot sauce inside the burrito.
  • Can be wrapped in foil and stored in the fridge for up to 2 days or frozen for meal prep.
  • Pairs perfectly with tortilla chips and a side of guacamole or pico de gallo.
