Ingredients
- 2 cups cooked chicken breast, shredded or diced
- 1 ripe avocado, diced
- 1/2 cup ranch dressing
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup red onion, finely chopped (optional)
- 1 tablespoon fresh lime juice
- 4 large flour tortillas (10-inch)
- 1 tablespoon olive oil or butter (for grilling)
- Salt and pepper to taste
Instructions
- In a large bowl, combine cooked chicken, diced avocado, ranch dressing, lime juice, salt, and pepper. Toss gently to coat evenly.
- Warm the flour tortillas in a dry skillet or microwave until soft and pliable.
- On each tortilla, layer shredded cheese, lettuce, tomatoes, and the chicken-avocado mixture. Sprinkle with a bit of red onion if using.
- Fold in the sides of each tortilla and roll it tightly into a burrito.
- Heat olive oil or butter in a skillet over medium heat. Place the burritos seam-side down and cook for 2–3 minutes per side, until golden and crispy.
