Description

A classic savory dish made with tender chicken livers sautéed with caramelized onions and served alongside crispy grilled bread.


Ingredients

  • 500 g chicken livers, cleaned and trimmed
  • 2 large onions, thinly sliced
  • 3 tbsp olive oil or butter
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground cumin (optional)
  • 1 tbsp lemon juice
  • 4 slices rustic bread


Instructions

  1. Heat 2 tablespoons of olive oil or butter in a skillet over medium heat.
  2. Add the sliced onions and cook slowly until soft and caramelized, about 10–12 minutes.
  3. Add garlic and stir for 30 seconds.
  4. Increase heat slightly and add chicken livers to the pan.
  5. Season with salt, black pepper, and cumin if using.
  6. Cook the livers for 5–7 minutes, stirring gently, until browned outside and just cooked inside.
  7. Drizzle with lemon juice and remove from heat.
  8. Brush bread slices with remaining oil and grill until golden and crisp.
  9. Serve chicken livers hot with onions and grilled bread on the side.

Notes

  • Do not overcook the livers to keep them tender.
  • You can add chili flakes for extra heat.
