Description

Juicy chicken breasts stuffed with mozzarella cheese, coated in a light seasoning, and baked to perfection for a high-protein, cheesy main dish.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 mozzarella cheese sticks (or 4 oz fresh mozzarella, cut into logs)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Using a sharp knife, cut a pocket into the side of each chicken breast without slicing all the way through.
  3. Stuff each pocket with a mozzarella stick or fresh mozzarella piece. Secure with toothpicks if needed.
  4. In a small bowl, mix olive oil, garlic powder, paprika, Italian seasoning, salt, and pepper. Rub mixture all over chicken breasts.
  5. Place chicken on baking sheet and sprinkle with Parmesan cheese.
  6. Bake for 22–25 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and cheese is melted.
  7. Garnish with fresh basil or parsley and serve hot.

Notes

  • For extra flavor, wrap chicken breasts in prosciutto before baking.
  • Serve with roasted vegetables, salad, or zucchini noodles for a low-carb high-protein meal.
  • Use reduced-fat mozzarella if looking to lower fat content while keeping protein high.
