Description
A light and flavorful dish featuring juicy chicken sausages paired with sautéed zucchini, fresh tomatoes, and pasta, all tossed in a savory garlic sauce for a quick and satisfying meal.
Ingredients
- 4 chicken sausages, sliced into rounds
- 2 medium zucchinis, sliced into half-moons
- 1 pint cherry tomatoes, halved
- 8 oz pasta (penne, spaghetti, or your choice)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside, reserving 1/4 cup of pasta water.
- In a large skillet, heat olive oil over medium heat. Add the sliced chicken sausages and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant.
- Add the zucchini slices and cook for 4-5 minutes until tender. Stir in the halved cherry tomatoes and cook for another 2-3 minutes until they soften.
- Return the cooked sausages to the skillet, then add the cooked pasta. Toss to combine, adding a bit of reserved pasta water if needed to create a light sauce.
- Season with salt and pepper to taste, and garnish with fresh basil and grated Parmesan cheese if desired.
- Serve immediately and enjoy!

- Feel free to use any variety of chicken sausage (spicy, sweet, etc.) to adjust the flavor profile.
- For extra creaminess, you can add a splash of cream or a dollop of ricotta cheese.
