A light and flavorful dish featuring juicy chicken sausages paired with sautéed zucchini, fresh tomatoes, and pasta, all tossed in a savory garlic sauce for a quick and satisfying meal.


Ingredients

  • 4 chicken sausages, sliced into rounds
  • 2 medium zucchinis, sliced into half-moons
  • 1 pint cherry tomatoes, halved
  • 8 oz pasta (penne, spaghetti, or your choice)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside, reserving 1/4 cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced chicken sausages and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add garlic and red pepper flakes (if using) and sauté for about 30 seconds until fragrant.
  4. Add the zucchini slices and cook for 4-5 minutes until tender. Stir in the halved cherry tomatoes and cook for another 2-3 minutes until they soften.
  5. Return the cooked sausages to the skillet, then add the cooked pasta. Toss to combine, adding a bit of reserved pasta water if needed to create a light sauce.
  6. Season with salt and pepper to taste, and garnish with fresh basil and grated Parmesan cheese if desired.
  7. Serve immediately and enjoy!

  • Feel free to use any variety of chicken sausage (spicy, sweet, etc.) to adjust the flavor profile.
  • For extra creaminess, you can add a splash of cream or a dollop of ricotta cheese.
