Description

A cheesy, flavorful chicken taco casserole layered with shredded chicken, tortillas, taco-seasoned sauce, and melted cheese for an easy family dinner.


Ingredients

  • 3 cups cooked shredded chicken
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup sour cream
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 8 small flour or corn tortillas, cut into halves
  • 2 cups shredded Mexican blend cheese
  • 2 tbsp olive oil
  • 1/2 cup green onions, chopped
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil and add shredded chicken. Stir in taco seasoning, salsa, sour cream, diced tomatoes, black beans, and corn. Mix well and simmer for 5 minutes.
  3. Spread a thin layer of the chicken mixture on the bottom of the prepared dish.
  4. Layer tortillas over the mixture, followed by more chicken mixture and cheese. Repeat layers until all ingredients are used, finishing with cheese on top.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
  6. Remove from oven and let rest for 5 minutes. Garnish with green onions and cilantro before serving.

  • Use rotisserie chicken for a quick shortcut.
  • Swap tortillas with tortilla chips for a crunchy twist.
  • Serve with avocado, jalapeños, or extra salsa for added flavor.
