Description
A cheesy, flavorful chicken taco casserole layered with shredded chicken, tortillas, taco-seasoned sauce, and melted cheese for an easy family dinner.
Ingredients
- 3 cups cooked shredded chicken
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup sour cream
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels (fresh, frozen, or canned)
- 8 small flour or corn tortillas, cut into halves
- 2 cups shredded Mexican blend cheese
- 2 tbsp olive oil
- 1/2 cup green onions, chopped
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil and add shredded chicken. Stir in taco seasoning, salsa, sour cream, diced tomatoes, black beans, and corn. Mix well and simmer for 5 minutes.
- Spread a thin layer of the chicken mixture on the bottom of the prepared dish.
- Layer tortillas over the mixture, followed by more chicken mixture and cheese. Repeat layers until all ingredients are used, finishing with cheese on top.
- Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
- Remove from oven and let rest for 5 minutes. Garnish with green onions and cilantro before serving.
Notes
- Use rotisserie chicken for a quick shortcut.
- Swap tortillas with tortilla chips for a crunchy twist.
- Serve with avocado, jalapeños, or extra salsa for added flavor.
