Description

Christmas Chocolate Rice Krispie Balls are festive, no-bake treats made with gooey marshmallows, crispy rice cereal, and rich chocolate. Rolled into bite-sized balls and decorated with holiday sprinkles, they’re perfect for cookie trays, gifting, or a fun holiday activity with kids.


Ingredients

  • 3 cups Rice Krispies cereal
  • 1/2 cup unsalted butter
  • 1 (10 oz) bag mini marshmallows
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups semi-sweet or milk chocolate chips
  • 1 tablespoon coconut oil or shortening
  • 1/4 cup festive sprinkles (red, green, and white)


Instructions

  1. Line a baking sheet with parchment paper.
  2. In a large saucepan over medium heat, melt butter. Add marshmallows and stir continuously until melted and smooth.
  3. Remove from heat and stir in vanilla extract, then quickly mix in Rice Krispies cereal until fully coated.
  4. Let mixture cool slightly until it’s easy to handle but still warm. Grease your hands lightly with butter and roll mixture into 1-inch balls. Place on the prepared baking sheet.
  5. In a microwave-safe bowl, melt chocolate chips with coconut oil in 20-second intervals, stirring between each until smooth.
  6. Dip each Rice Krispie ball halfway or fully into melted chocolate, then place back on the parchment paper.
  7. Immediately top with Christmas sprinkles before chocolate hardens.
  8. Chill in the refrigerator for 20–30 minutes to set. Store in an airtight container.

Notes

  • Add crushed candy canes or mini M&Ms to the mixture for extra holiday fun.
  • Use white chocolate or dark chocolate for variety.
  • For dairy-free, use vegan butter and dairy-free chocolate chips.
