Description

Ingredients

  • 10 oz fettuccine or linguine pasta
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced (cremini or button)
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • 1/4 cup reserved pasta water
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook pasta according to package directions in salted water until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat butter and olive oil over medium heat. Add garlic and sauté for 30 seconds until fragrant.
  3. Add sliced mushrooms and cook for 5–6 minutes until golden and tender.
  4. Stir in heavy cream and bring to a gentle simmer. Add Parmesan cheese, salt, pepper, and nutmeg (if using), stirring until smooth and creamy.
  5. Add the spinach and cook for 1–2 minutes until wilted.
  6. Toss cooked pasta into the sauce, adding a splash of reserved pasta water as needed to loosen the sauce.
  7. Serve immediately, garnished with parsley and extra Parmesan cheese.

Notes

  • Use freshly grated Parmesan for the smoothest, richest sauce.
  • For extra protein, add grilled chicken, shrimp, or tofu.
  • To make it lighter, substitute milk and a tablespoon of cream cheese instead of heavy cream.
