Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp butter
  • 8 oz cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 tbsp all-purpose flour (optional, for thickening)
  • 1 tbsp chopped parsley (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish and set aside.
  2. Season chicken breasts with salt, pepper, and garlic powder.
  3. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 2–3 minutes per side until golden brown (it doesn’t need to be cooked through). Transfer chicken to the prepared baking dish.
  4. In the same skillet, melt butter and add mushrooms. Sauté for 4–5 minutes until tender and lightly browned.
  5. Add garlic and cook for 1 minute until fragrant.
  6. Pour in chicken broth and stir, scraping up any browned bits from the pan. Add heavy cream, Parmesan cheese, and Italian seasoning. Stir until sauce is smooth and begins to thicken. If desired, whisk in flour for a thicker sauce.
  7. Pour the creamy mushroom sauce over the chicken breasts in the baking dish.
  8. Bake uncovered for 20–25 minutes, or until the chicken is cooked through and the sauce is bubbly.
  9. Garnish with chopped parsley before serving.
  10. Serve warm with mashed potatoes, rice, or pasta for a complete meal.
