Description
A hearty and creamy bean soup made with savory sausage, vegetables, and herbs — perfect for a comforting one-pot meal.
Ingredients
- 1 tablespoon olive oil
- 1 pound smoked sausage or kielbasa, sliced
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 cans (15 oz each) cannellini beans, drained and rinsed
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add sliced sausage and cook until browned, about 5 minutes.
- Stir in onion, carrots, and celery; cook until softened, about 5 minutes.
- Add garlic and cook until fragrant, about 1 minute.
- Stir in beans, chicken broth, thyme, and smoked paprika. Bring to a boil.
- Reduce heat and simmer for 15–20 minutes to allow flavors to blend.
- Stir in heavy cream and simmer for another 5 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh parsley and serve warm.
Notes
- For extra creaminess, blend half of the soup before adding the cream.
- Use turkey sausage for a lighter version.
- Great served with crusty bread.
