Description

A hearty and creamy bean soup made with savory sausage, vegetables, and herbs — perfect for a comforting one-pot meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage or kielbasa, sliced
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add sliced sausage and cook until browned, about 5 minutes.
  3. Stir in onion, carrots, and celery; cook until softened, about 5 minutes.
  4. Add garlic and cook until fragrant, about 1 minute.
  5. Stir in beans, chicken broth, thyme, and smoked paprika. Bring to a boil.
  6. Reduce heat and simmer for 15–20 minutes to allow flavors to blend.
  7. Stir in heavy cream and simmer for another 5 minutes.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley and serve warm.

Notes

  • For extra creaminess, blend half of the soup before adding the cream.
  • Use turkey sausage for a lighter version.
  • Great served with crusty bread.
