Ingredients
- 2 tbsp olive oil or butter
- 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup long-grain white rice (uncooked)
- 2 cups chicken broth
- 1 cup milk or heavy cream
- 1 can (10.5 oz) cream of chicken soup
- 1 cup shredded cheddar cheese (optional)
- 1/2 cup frozen peas or mixed vegetables
- Salt and black pepper to taste
- 1/2 tsp paprika (optional)
- Fresh parsley for garnish
Instructions
- Heat olive oil or butter in a large skillet or pot over medium heat.
- Add the chicken pieces, season with salt, pepper, and paprika, and cook until lightly browned. Remove and set aside.
- In the same skillet, add the chopped onion and cook until softened. Stir in minced garlic and cook for another 30 seconds.
- Add the uncooked rice and stir to coat in the oil and onion mixture for about 1 minute.
- Pour in the chicken broth, milk, and cream of chicken soup. Stir to combine.
- Return the cooked chicken to the pan, bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.
- Stir in the peas and shredded cheese (if using), and cook for another 2–3 minutes until creamy and well mixed.
- Garnish with chopped parsley before serving.

- Use rotisserie chicken for a quicker version.
- Substitute brown rice — just increase cooking time by about 15 minutes.
- Add mushrooms or broccoli for extra flavor and nutrition.
- For a lighter option, use low-fat milk and reduced-fat cheese.
