Ingredients
- 2 large chicken breasts, cut into bite-sized pieces
- 1 cup uncooked white rice
- 2 cups chicken broth
- 3 tablespoons butter
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil and 1 tablespoon butter in a large skillet over medium heat.
- Add chicken pieces, season with salt, pepper, and paprika, and cook until golden and cooked through. Remove and set aside.
- In the same skillet, add remaining butter and sauté onion until soft, about 3–4 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in uncooked rice and toast lightly for 1–2 minutes.
- Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes until rice is tender.
- Stir in heavy cream, Parmesan cheese, and thyme, mixing until creamy and smooth.
- Return cooked chicken to the skillet and simmer for 3–4 minutes until heated through.
- Adjust seasoning, garnish with fresh parsley, and serve warm.

- Use boneless thighs for juicier meat.
- Do not overcook rice to keep it fluffy.
- Add spinach or mushrooms for extra flavor.
- For a lighter version, substitute half-and-half for heavy cream.
