A comforting and creamy dish featuring tender garlic butter chicken tossed with rotini pasta in a rich parmesan sauce, perfect for a hearty family meal.


Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 250g rotini pasta
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup grated parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp chopped parsley (for garnish)


Instructions

  1. Cook rotini pasta according to package instructions until al dente. Drain and set aside.
  2. Season chicken pieces with salt, pepper, paprika, and Italian seasoning.
  3. Heat olive oil and 1 tablespoon butter in a large skillet over medium heat.
  4. Add chicken and cook for 5-7 minutes until golden and fully cooked. Remove and set aside.
  5. In the same pan, melt remaining butter and sauté garlic until fragrant.
  6. Pour in heavy cream and bring to a gentle simmer.
  7. Add parmesan and mozzarella cheese, stirring until melted and smooth.
  8. Return chicken to the pan and stir to coat in the sauce.
  9. Add cooked rotini and toss until well combined.
  10. Cook for 2-3 minutes until heated through.
  11. Garnish with parsley and serve hot.
