Description

Creamy, buttery, and garlicky Instant Pot mashed potatoes made quickly and easily for the perfect comforting side dish.


Ingredients

  • 2 pounds russet or Yukon gold potatoes, peeled and cubed
  • 4 cloves garlic, peeled
  • 1 cup water or chicken broth
  • 1 teaspoon salt (plus more to taste)
  • 4 tablespoons unsalted butter
  • 1/2 cup whole milk (warm)
  • 1/4 cup sour cream (optional)
  • Freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Add potatoes, garlic, water or broth, and salt to the Instant Pot.
  2. Close the lid, set valve to sealing, and cook on high pressure for 10 minutes.
  3. Quick release the pressure carefully once cooking is complete.
  4. Drain any excess liquid, then return potatoes and garlic to the pot.
  5. Add butter and mash until smooth.
  6. Gradually stir in warm milk and sour cream until creamy.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley and serve warm.

Notes

  • For richer flavor, use half-and-half instead of milk.
  • Yukon gold potatoes create a naturally creamier texture.
  • Do not overmix or potatoes can become gluey.
