Description
Creamy, buttery, and garlicky Instant Pot mashed potatoes made quickly and easily for the perfect comforting side dish.
Ingredients
- 2 pounds russet or Yukon gold potatoes, peeled and cubed
- 4 cloves garlic, peeled
- 1 cup water or chicken broth
- 1 teaspoon salt (plus more to taste)
- 4 tablespoons unsalted butter
- 1/2 cup whole milk (warm)
- 1/4 cup sour cream (optional)
- Freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Add potatoes, garlic, water or broth, and salt to the Instant Pot.
- Close the lid, set valve to sealing, and cook on high pressure for 10 minutes.
- Quick release the pressure carefully once cooking is complete.
- Drain any excess liquid, then return potatoes and garlic to the pot.
- Add butter and mash until smooth.
- Gradually stir in warm milk and sour cream until creamy.
- Season with salt and pepper to taste.
- Garnish with fresh parsley and serve warm.
Notes
- For richer flavor, use half-and-half instead of milk.
- Yukon gold potatoes create a naturally creamier texture.
- Do not overmix or potatoes can become gluey.
