Description

Tender seared salmon fillets smothered in a luscious, creamy roasted red pepper sauce infused with garlic, Parmesan, and herbs. This dish combines smoky sweetness from roasted peppers with the richness of cream for a restaurant-quality meal made at home.


Ingredients

  • 4 salmon fillets (about 6 oz each, skin on or off)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 roasted red bell peppers (jarred or homemade)
  • 3 cloves garlic (minced)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chicken or vegetable broth
  • 1 tbsp butter
  • 1/2 tsp Italian seasoning
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley or basil (for garnish)


Instructions

  1. Pat the salmon fillets dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear salmon fillets for 3-4 minutes per side until golden and cooked through. Remove from skillet and set aside.
  3. In the same skillet, melt butter and sauté minced garlic for 30 seconds until fragrant.
  4. Add roasted red peppers, broth, heavy cream, Parmesan, and Italian seasoning. Simmer for 3-4 minutes.
  5. Transfer the sauce mixture to a blender and blend until smooth and creamy. Return to the skillet.
  6. Stir in lemon juice and adjust seasoning with salt and pepper to taste.
  7. Return salmon fillets to the pan, spoon sauce over the top, and simmer gently for 2 minutes to warm through.
  8. Garnish with fresh parsley or basil and serve immediately.

  • Use jarred roasted peppers for convenience, or roast fresh ones for a deeper smoky flavor.
  • This sauce pairs beautifully with pasta, rice, or mashed potatoes.
