Tender seared salmon fillets smothered in a luscious, creamy roasted red pepper sauce infused with garlic, Parmesan, and herbs. This dish combines smoky sweetness from roasted peppers with the richness of cream for a restaurant-quality meal made at home.
Ingredients
- 4 salmon fillets (about 6 oz each, skin on or off)
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 roasted red bell peppers (jarred or homemade)
- 3 cloves garlic (minced)
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup chicken or vegetable broth
- 1 tbsp butter
- 1/2 tsp Italian seasoning
- 1 tbsp lemon juice
- 1 tbsp chopped parsley or basil (for garnish)
Instructions
- Pat the salmon fillets dry and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear salmon fillets for 3-4 minutes per side until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, melt butter and sauté minced garlic for 30 seconds until fragrant.
- Add roasted red peppers, broth, heavy cream, Parmesan, and Italian seasoning. Simmer for 3-4 minutes.
- Transfer the sauce mixture to a blender and blend until smooth and creamy. Return to the skillet.
- Stir in lemon juice and adjust seasoning with salt and pepper to taste.
- Return salmon fillets to the pan, spoon sauce over the top, and simmer gently for 2 minutes to warm through.
- Garnish with fresh parsley or basil and serve immediately.

- Use jarred roasted peppers for convenience, or roast fresh ones for a deeper smoky flavor.
- This sauce pairs beautifully with pasta, rice, or mashed potatoes.
- For extra heat, add a pinch of red pepper flakes to the sauce.
