Ingredients

  • 2 lbs baby potatoes, halved
  • 3 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian herbs (or mix of thyme, oregano, basil)
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper or lightly grease it.
  3. In a large bowl, mix melted butter, olive oil, minced garlic, Italian herbs, paprika, salt, and pepper.
  4. Add halved potatoes to the mixture and toss until evenly coated.
  5. Arrange potatoes cut-side down on the prepared baking sheet in a single layer.
  6. Sprinkle half of the Parmesan cheese over the potatoes.
  7. Roast for 25–30 minutes or until golden and crisp on the edges.
  8. Flip potatoes, sprinkle remaining Parmesan, and roast another 10 minutes.
