Ingredients
- 2 lbs baby potatoes, halved
- 3 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tsp dried Italian herbs (or mix of thyme, oregano, basil)
- 1/2 tsp paprika
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Line a large baking sheet with parchment paper or lightly grease it.
- In a large bowl, mix melted butter, olive oil, minced garlic, Italian herbs, paprika, salt, and pepper.
- Add halved potatoes to the mixture and toss until evenly coated.
- Arrange potatoes cut-side down on the prepared baking sheet in a single layer.
- Sprinkle half of the Parmesan cheese over the potatoes.
- Roast for 25–30 minutes or until golden and crisp on the edges.
- Flip potatoes, sprinkle remaining Parmesan, and roast another 10 minutes.
- Remove from oven, garnish with chopped parsley, and serve hot.
