Description
Juicy chicken tenders marinated in Greek-inspired seasonings, coated with a crispy breadcrumb and Parmesan crust, and baked or fried to golden perfection.
Ingredients
- 1 1/2 lbs chicken tenders
- 1 cup plain Greek yogurt
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 2 tsp dried oregano
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup breadcrumbs (panko recommended)
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- In a bowl, combine Greek yogurt, lemon juice, garlic, olive oil, oregano, paprika, salt, and pepper.
- Add chicken tenders to the marinade and coat well. Cover and refrigerate for at least 30 minutes (or up to 4 hours).
- Preheat oven to 400°F (200°C) or heat oil in a skillet if frying.
- In a shallow dish, mix breadcrumbs and Parmesan cheese.
- Remove chicken from marinade, letting excess drip off, and coat in breadcrumb mixture.
- If baking, arrange tenders on a parchment-lined baking sheet and lightly spray with cooking oil. Bake 18–20 minutes, flipping halfway through, until golden and cooked through.
- If frying, cook tenders in hot oil for 3–4 minutes per side until golden brown and crispy.
- Garnish with parsley and serve with lemon wedges.
Notes
- Serve with tzatziki sauce or Greek salad for a complete meal.
- For extra crunch, use seasoned panko breadcrumbs.
- Marinating longer enhances flavor and tenderness.
