Description

Juicy chicken tenders marinated in Greek-inspired seasonings, coated with a crispy breadcrumb and Parmesan crust, and baked or fried to golden perfection.


Ingredients

  • 1 1/2 lbs chicken tenders
  • 1 cup plain Greek yogurt
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup breadcrumbs (panko recommended)
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)


Instructions

  1. In a bowl, combine Greek yogurt, lemon juice, garlic, olive oil, oregano, paprika, salt, and pepper.
  2. Add chicken tenders to the marinade and coat well. Cover and refrigerate for at least 30 minutes (or up to 4 hours).
  3. Preheat oven to 400°F (200°C) or heat oil in a skillet if frying.
  4. In a shallow dish, mix breadcrumbs and Parmesan cheese.
  5. Remove chicken from marinade, letting excess drip off, and coat in breadcrumb mixture.
  6. If baking, arrange tenders on a parchment-lined baking sheet and lightly spray with cooking oil. Bake 18–20 minutes, flipping halfway through, until golden and cooked through.
  7. If frying, cook tenders in hot oil for 3–4 minutes per side until golden brown and crispy.
  8. Garnish with parsley and serve with lemon wedges.

  • For extra crunch, use seasoned panko breadcrumbs.
