Description

A hearty slow-cooked casserole combining tender potatoes, savory beef, peppers, onions, and melted cheese for a comforting Philly cheesesteak-inspired dish.


Ingredients

  • 1 1/2 lbs thinly sliced beef sirloin or steak strips
  • 6 medium russet potatoes, peeled and diced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 2 cups shredded provolone cheese (or mozzarella)
  • 1 cup shredded cheddar cheese
  • 1 cup beef broth
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 tsp Italian seasoning


Instructions

  1. Spray the inside of your crockpot with nonstick cooking spray.
  2. Layer half of the diced potatoes on the bottom of the crockpot.
  3. Add half of the sliced onions, peppers, garlic, and beef strips on top.
  4. Sprinkle with half of the seasonings and drizzle with olive oil.
  5. Repeat the layers with remaining potatoes, beef, onions, and peppers.
  6. Pour beef broth evenly over the layers.
  7. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender and beef is cooked through.
  8. In the last 15 minutes of cooking, sprinkle shredded provolone and cheddar cheese on top, cover, and let melt.
  9. Serve hot and garnish with fresh parsley if desired.

Notes

  • You can substitute ground beef for steak strips if preferred.
  • For extra flavor, sauté onions and peppers before adding them to the crockpot.
  • Best served warm as a main dish casserole.
