Description
A hearty slow-cooked casserole combining tender potatoes, savory beef, peppers, onions, and melted cheese for a comforting Philly cheesesteak-inspired dish.
Ingredients
- 1 1/2 lbs thinly sliced beef sirloin or steak strips
- 6 medium russet potatoes, peeled and diced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 large onion, sliced
- 2 cloves garlic, minced
- 2 cups shredded provolone cheese (or mozzarella)
- 1 cup shredded cheddar cheese
- 1 cup beef broth
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tsp Italian seasoning
Instructions
- Spray the inside of your crockpot with nonstick cooking spray.
- Layer half of the diced potatoes on the bottom of the crockpot.
- Add half of the sliced onions, peppers, garlic, and beef strips on top.
- Sprinkle with half of the seasonings and drizzle with olive oil.
- Repeat the layers with remaining potatoes, beef, onions, and peppers.
- Pour beef broth evenly over the layers.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender and beef is cooked through.
- In the last 15 minutes of cooking, sprinkle shredded provolone and cheddar cheese on top, cover, and let melt.
- Serve hot and garnish with fresh parsley if desired.
Notes
- You can substitute ground beef for steak strips if preferred.
- For extra flavor, sauté onions and peppers before adding them to the crockpot.
- Best served warm as a main dish casserole.
