Description
A comforting, hearty crockpot meal made with tender shredded chicken simmered in a creamy broth and topped with fluffy Bisquick dumplings that cook right in the slow cooker.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 cup diced onion
- 1 cup sliced carrots
- 1 cup sliced celery
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt to taste
- Black pepper to taste
- 1 cup Bisquick baking mix
- 2/3 cup milk
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Add chicken broth, cream of chicken soup, onion, carrots, celery, garlic powder, thyme, salt, and pepper.
- Cover and cook on low for 6 hours or high for 3–4 hours, until the chicken is fully cooked.
- Remove the chicken, shred it with two forks, and return it to the crockpot.
- In a bowl, mix Bisquick and milk until just combined.
- Drop spoonfuls of the dumpling mixture evenly over the chicken mixture.
- Cover and cook on high for 1 hour, or until dumplings are cooked through and fluffy.
- Serve hot.
Notes
- Do not lift the lid while the dumplings are cooking.
- You can add peas or corn for extra vegetables.
- For thicker broth, remove the lid during the last 15 minutes.
