Description

A comforting, hearty crockpot meal made with tender shredded chicken simmered in a creamy broth and topped with fluffy Bisquick dumplings that cook right in the slow cooker.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup diced onion
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt to taste
  • Black pepper to taste
  • 1 cup Bisquick baking mix
  • 2/3 cup milk


Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add chicken broth, cream of chicken soup, onion, carrots, celery, garlic powder, thyme, salt, and pepper.
  3. Cover and cook on low for 6 hours or high for 3–4 hours, until the chicken is fully cooked.
  4. Remove the chicken, shred it with two forks, and return it to the crockpot.
  5. In a bowl, mix Bisquick and milk until just combined.
  6. Drop spoonfuls of the dumpling mixture evenly over the chicken mixture.
  7. Cover and cook on high for 1 hour, or until dumplings are cooked through and fluffy.
  8. Serve hot.

Notes

  • Do not lift the lid while the dumplings are cooking.
  • You can add peas or corn for extra vegetables.
  • For thicker broth, remove the lid during the last 15 minutes.
