Description

A hearty and comforting Crockpot Loaded Steak and Potato Bake featuring tender steak bites, creamy potatoes, melted cheese, and smoky bacon — all slow-cooked to perfection for a flavorful, filling meal.


Ingredients

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 2 lbs russet potatoes, peeled and cubed
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup sour cream
  • 1/4 cup green onions, sliced
  • 1 tbsp ranch seasoning mix
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup beef broth or water


Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear steak cubes for 1–2 minutes per side until browned (they will finish cooking in the slow cooker).
  2. Lightly grease the inside of your slow cooker with nonstick spray.
  3. Add the cubed potatoes to the bottom of the slow cooker.
  4. Layer the seared steak on top of the potatoes.
  5. Sprinkle in ranch seasoning, garlic powder, smoked paprika, salt, and pepper.
  6. Pour in the beef broth or water to keep the mixture moist.
  7. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until potatoes are tender and steak is cooked through.
  8. In the last 15 minutes of cooking, sprinkle cheddar and mozzarella cheese over the top. Cover again until melted.
  9. Top with crumbled bacon, a dollop of sour cream, and sliced green onions before serving.
