Description

A hearty and flavorful Crockpot Taco Casserole made with seasoned ground beef, beans, corn, tomatoes, and layers of cheese, slow-cooked to perfection for an easy family-friendly meal.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet (1 oz) taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies (Rotel)
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups crushed tortilla chips
  • 1/2 cup sour cream (optional, for serving)
  • 1/4 cup chopped fresh cilantro (optional, for garnish)


Instructions

  1. In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked. Drain excess grease.
  2. Stir in the taco seasoning according to packet instructions and mix well.
  3. Lightly grease the crockpot. Add half of the beef mixture to the bottom.
  4. Layer half of the black beans, corn, diced tomatoes, salsa, crushed tortilla chips, and shredded cheese over the beef.
  5. Repeat the layers with the remaining ingredients, finishing with cheese on top.
  6. Cover and cook on low for 3-4 hours or on high for 1 1/2-2 hours, until heated through and cheese is melted.
  7. Serve hot topped with sour cream and fresh cilantro if desired.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • Add jalapeños for extra heat.
  • For a lower-carb option, replace tortilla chips with cauliflower rice.
