Description
A hearty and flavorful Crockpot Taco Casserole made with seasoned ground beef, beans, corn, tomatoes, and layers of cheese, slow-cooked to perfection for an easy family-friendly meal.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 1 packet (1 oz) taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies (Rotel)
- 1 cup salsa
- 2 cups shredded cheddar cheese
- 1 1/2 cups crushed tortilla chips
- 1/2 cup sour cream (optional, for serving)
- 1/4 cup chopped fresh cilantro (optional, for garnish)
Instructions
- In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked. Drain excess grease.
- Stir in the taco seasoning according to packet instructions and mix well.
- Lightly grease the crockpot. Add half of the beef mixture to the bottom.
- Layer half of the black beans, corn, diced tomatoes, salsa, crushed tortilla chips, and shredded cheese over the beef.
- Repeat the layers with the remaining ingredients, finishing with cheese on top.
- Cover and cook on low for 3-4 hours or on high for 1 1/2-2 hours, until heated through and cheese is melted.
- Serve hot topped with sour cream and fresh cilantro if desired.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- Add jalapeños for extra heat.
- For a lower-carb option, replace tortilla chips with cauliflower rice.
- This casserole can be assembled ahead of time and refrigerated before cooking.
