Description

A simple and delicious low-carb chicken casserole made with juicy chicken, creamy cheese sauce, and fresh vegetables, baked until golden and bubbly.


Ingredients

  • 2 lbs boneless, skinless chicken breasts, cooked and shredded
  • 1 cup broccoli florets (steamed lightly)
  • 1 cup cauliflower florets (steamed lightly)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet, heat olive oil over medium heat and sauté onion and garlic until softened.
  3. In a large mixing bowl, combine shredded chicken, broccoli, cauliflower, sautéed onion and garlic, cream cheese, sour cream, heavy cream, paprika, garlic powder, onion powder, salt, and pepper. Mix well.
  4. Transfer mixture into the prepared baking dish. Top with cheddar, mozzarella, and Parmesan cheeses.
  5. Bake for 25–30 minutes until cheese is melted and bubbly.
  6. Garnish with parsley and serve warm.

Notes

  • Can substitute zucchini or spinach for broccoli and cauliflower.
  • Use rotisserie chicken for a quick and easy version.
  • Pairs well with a side salad for a complete low-carb meal.
