Description
A simple and delicious low-carb chicken casserole made with juicy chicken, creamy cheese sauce, and fresh vegetables, baked until golden and bubbly.
Ingredients
- 2 lbs boneless, skinless chicken breasts, cooked and shredded
- 1 cup broccoli florets (steamed lightly)
- 1 cup cauliflower florets (steamed lightly)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a skillet, heat olive oil over medium heat and sauté onion and garlic until softened.
- In a large mixing bowl, combine shredded chicken, broccoli, cauliflower, sautéed onion and garlic, cream cheese, sour cream, heavy cream, paprika, garlic powder, onion powder, salt, and pepper. Mix well.
- Transfer mixture into the prepared baking dish. Top with cheddar, mozzarella, and Parmesan cheeses.
- Bake for 25–30 minutes until cheese is melted and bubbly.
- Garnish with parsley and serve warm.
Notes
- Can substitute zucchini or spinach for broccoli and cauliflower.
- Use rotisserie chicken for a quick and easy version.
- Pairs well with a side salad for a complete low-carb meal.
