Description
Flavor-packed fajita beef taco meal prep bowls made with seasoned steak, sautéed peppers and onions, and served over rice for an easy, high-protein lunch or dinner.
Ingredients
- 1 lb (450g) flank steak or sirloin, sliced thin
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 2 cups cooked white or brown rice
- 1 cup canned black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- In a small bowl, mix chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Toss sliced beef with half of the seasoning mixture until evenly coated.
- Heat olive oil in a large skillet over medium-high heat. Add beef and cook for 4–6 minutes until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, add sliced bell peppers and onion. Sprinkle with remaining seasoning and sauté for 5–7 minutes until tender-crisp.
- Prepare meal prep containers by dividing cooked rice evenly among 4 containers.
- Top each with cooked beef, sautéed vegetables, black beans, and corn.
- Garnish with chopped cilantro and serve with lime wedges. Store in the refrigerator for up to 4 days.
Notes
- Swap rice for cauliflower rice for a low-carb option.
- Add sliced avocado or a dollop of Greek yogurt before serving.
- Reheat in the microwave for 1–2 minutes until warmed through.
- Adjust seasoning to taste for extra spice.
