Description

Flavor-packed fajita beef taco meal prep bowls made with seasoned steak, sautéed peppers and onions, and served over rice for an easy, high-protein lunch or dinner.


Ingredients

  • 1 lb (450g) flank steak or sirloin, sliced thin
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cups cooked white or brown rice
  • 1 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges


Instructions

  1. In a small bowl, mix chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2. Toss sliced beef with half of the seasoning mixture until evenly coated.
  3. Heat olive oil in a large skillet over medium-high heat. Add beef and cook for 4–6 minutes until browned and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add sliced bell peppers and onion. Sprinkle with remaining seasoning and sauté for 5–7 minutes until tender-crisp.
  5. Prepare meal prep containers by dividing cooked rice evenly among 4 containers.
  6. Top each with cooked beef, sautéed vegetables, black beans, and corn.
  7. Garnish with chopped cilantro and serve with lime wedges. Store in the refrigerator for up to 4 days.

Notes

  • Swap rice for cauliflower rice for a low-carb option.
  • Add sliced avocado or a dollop of Greek yogurt before serving.
  • Reheat in the microwave for 1–2 minutes until warmed through.
  • Adjust seasoning to taste for extra spice.
