Flavorful Herbed Ricotta Stuffed Chicken Rolls are tender chicken breasts filled with creamy ricotta, fresh herbs, and Parmesan, then rolled, baked, and served golden and juicy.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/3 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • Toothpicks for securing


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Butterfly each chicken breast by slicing horizontally, then pound to an even 1/4-inch thickness.
  3. In a bowl, mix ricotta, Parmesan, spinach, garlic, basil, parsley, Italian seasoning, salt, and pepper.
  4. Spread a generous spoonful of the ricotta mixture onto each chicken breast.
  5. Roll each chicken breast tightly and secure with toothpicks.
  6. Brush chicken rolls with olive oil and sprinkle with paprika.
  7. Place in the baking dish seam-side down and bake for 25–30 minutes, or until chicken reaches 165°F (74°C).
  8. Rest 5 minutes before slicing and serving.
