Flavorful Herbed Ricotta Stuffed Chicken Rolls are tender chicken breasts filled with creamy ricotta, fresh herbs, and Parmesan, then rolled, baked, and served golden and juicy.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1/3 cup grated Parmesan cheese
- 1 cup fresh spinach, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh basil, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 teaspoon paprika
- Toothpicks for securing
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Butterfly each chicken breast by slicing horizontally, then pound to an even 1/4-inch thickness.
- In a bowl, mix ricotta, Parmesan, spinach, garlic, basil, parsley, Italian seasoning, salt, and pepper.
- Spread a generous spoonful of the ricotta mixture onto each chicken breast.
- Roll each chicken breast tightly and secure with toothpicks.
- Brush chicken rolls with olive oil and sprinkle with paprika.
- Place in the baking dish seam-side down and bake for 25–30 minutes, or until chicken reaches 165°F (74°C).
- Rest 5 minutes before slicing and serving.
Notes
- Use a meat mallet to ensure even chicken thickness for easier rolling.
- Add sun-dried tomatoes or roasted red peppers to the filling for extra flavor.
- Top with marinara or Alfredo sauce for a richer dish.
- Secure rolls well so the filling stays inside during baking.
