A rich and comforting casserole made with tender chicken, savory French onion flavors, and creamy orzo baked together in one dish for an easy, satisfying meal.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup uncooked orzo pasta
- 2 cups beef broth
- 1 cup chicken broth
- 1 packet (1 oz) French onion soup mix
- 1 cup shredded Gruyère cheese
- 1/2 cup shredded mozzarella cheese
- 1 cup sliced yellow onion
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp black pepper
- Salt to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat and sauté sliced onions until caramelized, about 10–12 minutes.
- In a large baking dish, add uncooked orzo, beef broth, chicken broth, and French onion soup mix. Stir to combine.
- Add chicken pieces, caramelized onions, garlic powder, salt, and pepper. Mix well.
- Cover tightly with foil and bake for 35 minutes.
- Remove foil, stir, and sprinkle Gruyère and mozzarella evenly over the top.
- Return to oven uncovered and bake for an additional 10–15 minutes, until cheese is melted and bubbly.
- Garnish with parsley and serve warm.
Notes
- Substitute Swiss cheese for Gruyère if needed.
- Ensure the dish is tightly covered during the first bake to properly cook the orzo.
- Let rest 5 minutes before serving for best texture.
