A rich and comforting casserole made with tender chicken, savory French onion flavors, and creamy orzo baked together in one dish for an easy, satisfying meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup uncooked orzo pasta
  • 2 cups beef broth
  • 1 cup chicken broth
  • 1 packet (1 oz) French onion soup mix
  • 1 cup shredded Gruyère cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 cup sliced yellow onion
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • Salt to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and sauté sliced onions until caramelized, about 10–12 minutes.
  3. In a large baking dish, add uncooked orzo, beef broth, chicken broth, and French onion soup mix. Stir to combine.
  4. Add chicken pieces, caramelized onions, garlic powder, salt, and pepper. Mix well.
  5. Cover tightly with foil and bake for 35 minutes.
  6. Remove foil, stir, and sprinkle Gruyère and mozzarella evenly over the top.
  7. Return to oven uncovered and bake for an additional 10–15 minutes, until cheese is melted and bubbly.
  8. Garnish with parsley and serve warm.

Notes

  • Substitute Swiss cheese for Gruyère if needed.
  • Ensure the dish is tightly covered during the first bake to properly cook the orzo.
  • Let rest 5 minutes before serving for best texture.
