Description

Tender cod bites coated in crispy garlic butter breadcrumbs, served with a refreshing creamy lemon herb dip. Perfect as an appetizer or light meal.


Ingredients

  • 1 lb cod fillets, cut into bite-sized pieces
  • 2 tbsp butter, melted
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs (panko preferred)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 cup mayonnaise
  • 2 tbsp Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh dill, finely chopped
  • 1 small garlic clove, minced (for dip)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it.
  2. In a small bowl, mix melted butter and minced garlic. In another bowl, combine breadcrumbs, Parmesan cheese, paprika, salt, and pepper.
  3. Dip each cod piece first in flour, then in beaten eggs, and finally coat with the garlic butter breadcrumb mixture.
  4. Place coated cod bites on the prepared baking sheet. Lightly spray with oil.
  5. Bake for 12–15 minutes or until golden brown and the fish flakes easily with a fork.
  6. Meanwhile, prepare the creamy lemon herb dip by combining mayonnaise, Greek yogurt, lemon juice, zest, parsley, dill, and minced garlic in a small bowl. Mix until smooth.
  7. Serve cod bites warm with the lemon herb dip on the side.

Notes

  • For extra crispiness, broil the cod bites for 1–2 minutes at the end of baking.
  • You can use air fryer at 375°F (190°C) for 10–12 minutes instead of baking.
  • Substitute cod with haddock or tilapia if preferred.
  • Use gluten-free breadcrumbs for a gluten-free version.
