A crispy, gooey grilled cheese sandwich stuffed with buttery garlic zucchini and melted cheese — a fun, veggie-packed twist on the classic comfort food that’s bursting with flavor and texture.
Ingredients
- 2 slices sourdough or artisan bread
- 1 small zucchini, grated
- 1 tbsp butter (plus more for grilling)
- 1 clove garlic, minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded mozzarella cheese
- 1/4 cup shredded cheddar cheese
- 1 tsp olive oil
- 1 tsp chopped parsley (optional, for garnish)
Instructions
- Grate the zucchini and squeeze out excess moisture using a clean towel or paper towel.
- Heat olive oil and 1 tbsp butter in a skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
- Add grated zucchini, salt, and pepper. Cook for 3–4 minutes until softened and slightly golden. Remove from heat.
- Spread butter on one side of each bread slice.
- Place one slice, butter side down, in a skillet. Top with half of the cheese, then the garlic butter zucchini, then the remaining cheese, and finally the second bread slice (butter side up).
- Grill over medium-low heat for 3–4 minutes per side until golden brown and cheese is melted.
- Cut in half, sprinkle with parsley, and serve warm.
Notes
- Use a mix of mozzarella and cheddar for the best melt and flavor.
- Try adding a pinch of chili flakes for a spicy kick.
- Press the sandwich gently with a spatula while grilling for extra crispiness.
- Great served with tomato soup or marinara sauce for dipping.
