Description

A hearty one-pan meal featuring juicy garlic-seasoned chicken thighs roasted with tender potatoes and finished with savory Parmesan cheese.


Ingredients

  • 1.5 lb chicken thighs (bone-in or boneless)
  • 1.5 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped (optional)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes with half of the olive oil, half of the garlic, salt, pepper, and paprika.
  3. Spread potatoes evenly on a large baking sheet.
  4. In the same bowl, coat the chicken with remaining olive oil, garlic, Italian seasoning, and half of the Parmesan cheese.
  5. Place chicken on the baking sheet alongside the potatoes.
  6. Bake for 35–40 minutes, turning potatoes halfway through, until chicken is cooked through.
  7. Sprinkle remaining Parmesan over chicken and potatoes and return to oven for 5 minutes until melted.
  8. Garnish with parsley and serve hot.

Notes

  • Boneless chicken breasts can be used but may require shorter cooking time.
  • For crispier potatoes, broil for the last 2–3 minutes.
  • Freshly grated Parmesan gives the best flavor.
