Description
A hearty one-pan meal featuring juicy garlic-seasoned chicken thighs roasted with tender potatoes and finished with savory Parmesan cheese.
Ingredients
- 1.5 lb chicken thighs (bone-in or boneless)
- 1.5 lb baby potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the potatoes with half of the olive oil, half of the garlic, salt, pepper, and paprika.
- Spread potatoes evenly on a large baking sheet.
- In the same bowl, coat the chicken with remaining olive oil, garlic, Italian seasoning, and half of the Parmesan cheese.
- Place chicken on the baking sheet alongside the potatoes.
- Bake for 35–40 minutes, turning potatoes halfway through, until chicken is cooked through.
- Sprinkle remaining Parmesan over chicken and potatoes and return to oven for 5 minutes until melted.
- Garnish with parsley and serve hot.
Notes
- Boneless chicken breasts can be used but may require shorter cooking time.
- For crispier potatoes, broil for the last 2–3 minutes.
- Freshly grated Parmesan gives the best flavor.
