Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1 large egg
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp chopped fresh parsley
  • 2 tbsp olive oil
  • 1/2 cup shredded mozzarella cheese (optional topping)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine milk and breadcrumbs; let soak for 2 minutes.
  3. Add ground chicken, egg, Parmesan, garlic, Italian seasoning, onion powder, salt, pepper, parsley, and olive oil.
  4. Mix gently until just combined; do not overmix.
  5. Transfer mixture to a greased loaf pan or shape into a loaf on a lined baking sheet.
  6. Top with mozzarella cheese if using.
  7. Bake uncovered for 40–45 minutes until internal temperature reaches 165°F (74°C).
  8. Let rest for 10 minutes before slicing and serving.
