Ingredients
- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup milk
- 1 large egg
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp salt
- 2 tbsp chopped fresh parsley
- 2 tbsp olive oil
- 1/2 cup shredded mozzarella cheese (optional topping)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine milk and breadcrumbs; let soak for 2 minutes.
- Add ground chicken, egg, Parmesan, garlic, Italian seasoning, onion powder, salt, pepper, parsley, and olive oil.
- Mix gently until just combined; do not overmix.
- Transfer mixture to a greased loaf pan or shape into a loaf on a lined baking sheet.
- Top with mozzarella cheese if using.
- Bake uncovered for 40–45 minutes until internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before slicing and serving.
