Description

A quick and flavorful dish featuring juicy garlic butter shrimp served over crispy, golden potatoes for a comforting and satisfying meal.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 3 tbsp butter
  • 5 garlic cloves, minced
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • Salt and pepper to taste
  • 1 tbsp lemon juice
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss the halved potatoes with olive oil, paprika, salt, and pepper. Spread them on the baking sheet and roast for 25–30 minutes, or until golden and crispy.
  3. In a skillet, melt the butter over medium heat. Add the garlic and cook for 1 minute until fragrant.
  4. Add the shrimp, onion powder, thyme, dried parsley, salt, and pepper. Cook for 2–3 minutes per side, until the shrimp turn pink.
  5. Stir in the lemon juice and remove from heat.
  6. Serve the garlic shrimp over the crispy potatoes and garnish with fresh parsley.

  • Add red pepper flakes for heat.
  • Use Yukon gold potatoes for best crispiness.
