A quick and flavorful dish featuring juicy garlic butter shrimp served over crispy, golden potatoes for a comforting and satisfying meal.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb baby potatoes, halved
- 3 tbsp olive oil
- 3 tbsp butter
- 5 garlic cloves, minced
- 1 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp dried thyme
- 1/2 tsp dried parsley
- Salt and pepper to taste
- 1 tbsp lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss the halved potatoes with olive oil, paprika, salt, and pepper. Spread them on the baking sheet and roast for 25–30 minutes, or until golden and crispy.
- In a skillet, melt the butter over medium heat. Add the garlic and cook for 1 minute until fragrant.
- Add the shrimp, onion powder, thyme, dried parsley, salt, and pepper. Cook for 2–3 minutes per side, until the shrimp turn pink.
- Stir in the lemon juice and remove from heat.
- Serve the garlic shrimp over the crispy potatoes and garnish with fresh parsley.
Notes
- Add red pepper flakes for heat.
- Use Yukon gold potatoes for best crispiness.
- A squeeze of extra lemon brightens the dish.
