Ingredients
- 8 lamb chops
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 teaspoon Dijon mustard
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
- 600 g potatoes, peeled and chopped
- 3 tablespoons butter
- 1/2 cup milk
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Boil the chopped potatoes in salted water for 15–18 minutes until tender.
- Drain the potatoes and mash with butter, milk, salt, and pepper until smooth and creamy. Keep warm.
- Season the lamb chops with salt and black pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear the lamb chops for 3–4 minutes per side until nicely browned.
- Reduce heat to medium and add garlic, honey, soy sauce, Dijon mustard, rosemary, and thyme.
- Spoon the glaze over the lamb chops and cook for another 2–3 minutes until slightly thickened and the lamb reaches desired doneness.
- Remove from heat and let the lamb rest for 3 minutes.
- Serve the glazed lamb chops over or beside the mashed potatoes and garnish with chopped parsley.
Notes
- Use bone-in lamb chops for the best flavor.
- Cook lamb to medium or medium-rare for maximum tenderness.
- For extra flavor, add a small knob of butter to the glaze while finishing the lamb.
- Serve with roasted vegetables or green beans for a balanced meal.
