Ingredients

  • 8 slices sourdough or rustic bread
  • 4 tbsp unsalted butter, softened
  • 2 tbsp olive oil
  • 2 large onions, thinly sliced
  • 1 tsp sugar
  • 1/2 tsp salt
  • 8 slices Gruyère or sharp cheddar cheese
  • Optional: 1 tsp balsamic vinegar (for added depth)


Instructions

  1. Heat olive oil in a skillet over medium-low heat. Add onions, sugar, and salt. Cook slowly for 25–30 minutes, stirring occasionally, until golden and caramelized. (Add balsamic vinegar in the last 5 minutes if using.)
  2. Butter one side of each bread slice.
  3. Layer cheese and caramelized onions between two slices of bread, buttered side out.
  4. Heat a skillet or griddle over medium heat. Cook sandwiches for 3–4 minutes per side until bread is golden brown and cheese is melted.
  5. Slice in half and serve hot.
