Description
A gourmet twist on the classic grilled cheese sandwich, layered with gooey melted cheese and sweet, savory caramelized onions on crispy golden bread.
Ingredients
- 8 slices sourdough or rustic bread
- 4 tbsp unsalted butter, softened
- 2 tbsp olive oil
- 2 large onions, thinly sliced
- 1 tsp sugar
- 1/2 tsp salt
- 8 slices Gruyère or sharp cheddar cheese
- Optional: 1 tsp balsamic vinegar (for added depth)
Instructions
- Heat olive oil in a skillet over medium-low heat. Add onions, sugar, and salt. Cook slowly for 25–30 minutes, stirring occasionally, until golden and caramelized. (Add balsamic vinegar in the last 5 minutes if using.)
- Butter one side of each bread slice.
- Layer cheese and caramelized onions between two slices of bread, buttered side out.
- Heat a skillet or griddle over medium heat. Cook sandwiches for 3–4 minutes per side until bread is golden brown and cheese is melted.
- Slice in half and serve hot.

- Mix cheeses like Gruyère, cheddar, and mozzarella for extra flavor.
- Caramelized onions can be made ahead and refrigerated for up to 5 days.
