Ingredients

  • 2 boneless skinless chicken breasts
  • 2 ripe avocados, sliced
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Preheat a grill pan or outdoor grill to medium-high heat.
  2. Brush chicken breasts with 1 tablespoon olive oil and season with salt, black pepper, and garlic powder.
  3. Grill the chicken for 5–7 minutes per side until fully cooked and grill marks appear.
  4. Remove chicken from heat and let rest for 5 minutes, then slice.
  5. In a large bowl, combine salad greens, cherry tomatoes, cucumber, red onion, and avocado.
  6. Top the salad with sliced grilled chicken.
  7. Drizzle with remaining olive oil and lemon juice.
  8. Toss gently and serve immediately.
