Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk or cream
  • Fresh parsley for garnish (optional)


Instructions

  1. Season chicken breasts with salt, pepper, and paprika.
  2. Grill the chicken over medium heat for 6–7 minutes per side, or until fully cooked. Set aside to rest.
  3. In a medium saucepan, heat olive oil and butter over medium heat.
  4. Add chopped onion, bell pepper, and garlic; sauté until softened and fragrant.
  5. Add rice and stir for 1–2 minutes until lightly toasted.
  6. Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and cook for 15–18 minutes, until rice is tender and liquid is absorbed.
  7. Remove from heat, stir in milk and shredded cheddar cheese until creamy and smooth.
  8. Slice grilled chicken and serve over the cheesy rice.
  9. Garnish with fresh parsley if desired, and serve warm.
