Description
Festive Halloween cupcakes flavored with warm pumpkin spice and topped with creamy frosting and candy pumpkins to resemble a spooky haunted pumpkin patch.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp pumpkin pie spice
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup milk
- 2 cups vanilla or cream cheese frosting
- Green food coloring
- 12 candy pumpkins
- Crushed chocolate cookies (for “dirt” topping)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
- In a separate bowl, combine pumpkin puree, oil, eggs, vanilla, and milk until smooth.
- Pour the wet mixture into the dry mixture and stir until just combined.
- Divide batter evenly among the cupcake liners and bake for 18–20 minutes or until a toothpick comes out clean.
- Let cupcakes cool completely.
- Tint the frosting with green food coloring and frost each cupcake.
- Sprinkle crushed chocolate cookies on top to resemble dirt.
- Place one candy pumpkin on each cupcake to create the haunted patch.
Notes
- For extra spookiness, add gummy worms or candy ghosts.
- Use cream cheese frosting for a rich flavor that pairs well with pumpkin.
- Cupcakes can be made a day ahead and decorated just before serving.
