Festive Halloween cupcakes flavored with warm pumpkin spice and topped with creamy frosting and candy pumpkins to resemble a spooky haunted pumpkin patch.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp pumpkin pie spice
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • 2 cups vanilla or cream cheese frosting
  • Green food coloring
  • 12 candy pumpkins
  • Crushed chocolate cookies (for “dirt” topping)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In a separate bowl, combine pumpkin puree, oil, eggs, vanilla, and milk until smooth.
  4. Pour the wet mixture into the dry mixture and stir until just combined.
  5. Divide batter evenly among the cupcake liners and bake for 18–20 minutes or until a toothpick comes out clean.
  6. Let cupcakes cool completely.
  7. Tint the frosting with green food coloring and frost each cupcake.
  8. Sprinkle crushed chocolate cookies on top to resemble dirt.
  9. Place one candy pumpkin on each cupcake to create the haunted patch.
