Ingredients

  • Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 6 tablespoons unsalted butter, melted
  • Cheesecake Filling:
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • Cinnamon Apple Topping:
  • 3 apples, peeled and diced
  • 2 tablespoons butter
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • Caramel Drizzle:
  • 1/2 cup caramel sauce (store-bought or homemade)


Instructions

  1. Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. Combine graham crumbs, sugar, and melted butter. Press into the bottom of the pan. Bake for 8 minutes and set aside.
  3. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing gently.
  4. Stir in sour cream and vanilla until just combined.
  5. Pour cheesecake batter over the crust. Bake 50–60 minutes, or until the center is slightly jiggly.
  6. Turn off oven, crack door, and let cheesecake cool inside for 1 hour. Then refrigerate at least 4 hours.
  7. For apples: Melt butter in a skillet. Add apples, brown sugar, cinnamon, and lemon juice. Cook 8–10 minutes until tender. Cool completely.
  8. Spoon cinnamon apples over chilled cheesecake.
  9. Drizzle generously with caramel before serving.
