A comforting and wholesome dish featuring juicy herb-marinated chicken served with creamy mashed potatoes and honey-glazed carrots. Perfect for a hearty family dinner or a cozy weekend meal.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 2 large potatoes, peeled and cubed
- 2 tbsp butter
- 1/4 cup milk or cream
- 3 large carrots, peeled and sliced
- 1 tbsp honey
- 1 tbsp butter (for carrots)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Rub chicken breasts with olive oil, thyme, rosemary, garlic powder, salt, and pepper. Let marinate for 10 minutes.
- Heat a skillet over medium-high heat and sear the chicken for 2–3 minutes per side until golden.
- Transfer chicken to the oven and bake for 12–15 minutes, or until cooked through.
- Meanwhile, boil the potatoes in salted water until tender, about 15 minutes.
- Drain and mash the potatoes with butter and milk (or cream) until smooth. Season with salt and pepper.
- In a separate pan, sauté the carrots in butter for 5 minutes. Add honey and cook another 5 minutes until glazed and tender.
- Serve the herb chicken with creamy mash and glazed carrots, garnished with parsley.
Notes
- You can use chicken thighs instead of breasts for extra juiciness.
- For a richer mash, substitute heavy cream for milk.
- Drizzle extra pan juices from the chicken over the mash for added flavor.
- Pair with a crisp green salad or steamed vegetables for a complete meal.
