Description

A comforting and wholesome dish featuring juicy herb-marinated chicken served with creamy mashed potatoes and honey-glazed carrots. Perfect for a hearty family dinner or a cozy weekend meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 large potatoes, peeled and cubed
  • 2 tbsp butter
  • 1/4 cup milk or cream
  • 3 large carrots, peeled and sliced
  • 1 tbsp honey
  • 1 tbsp butter (for carrots)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rub chicken breasts with olive oil, thyme, rosemary, garlic powder, salt, and pepper. Let marinate for 10 minutes.
  3. Heat a skillet over medium-high heat and sear the chicken for 2–3 minutes per side until golden.
  4. Transfer chicken to the oven and bake for 12–15 minutes, or until cooked through.
  5. Meanwhile, boil the potatoes in salted water until tender, about 15 minutes.
  6. Drain and mash the potatoes with butter and milk (or cream) until smooth. Season with salt and pepper.
  7. In a separate pan, sauté the carrots in butter for 5 minutes. Add honey and cook another 5 minutes until glazed and tender.
  8. Serve the herb chicken with creamy mash and glazed carrots, garnished with parsley.

Notes

  • You can use chicken thighs instead of breasts for extra juiciness.
  • For a richer mash, substitute heavy cream for milk.
  • Drizzle extra pan juices from the chicken over the mash for added flavor.
