Ingredients
- 8 lamb chops (about 700 g)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried rosemary
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon lemon juice
- 1 cup polenta (cornmeal)
- 4 cups water or chicken broth
- 2 tablespoons butter
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream
- Fresh parsley, chopped (for garnish)
Instructions
- Season the lamb chops with salt, black pepper, and dried rosemary.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the lamb chops for 3–4 minutes per side until browned and cooked to desired doneness. Remove and set aside.
- In the same skillet, reduce heat to medium and add minced garlic. Sauté for 30 seconds until fragrant.
- Add honey, soy sauce, and lemon juice. Stir and simmer for 2–3 minutes until slightly thickened.
- Return lamb chops to the skillet and coat them well with the honey garlic sauce. Remove from heat.
- Meanwhile, bring water or broth to a boil in a saucepan.
- Gradually whisk in polenta, reduce heat to low, and cook while stirring for 15–20 minutes until creamy.
- Stir in butter, heavy cream, and Parmesan cheese. Season with salt to taste.
- Serve lamb chops over creamy Parmesan polenta, spooning extra sauce on top and garnishing with parsley.

- Use low-sodium soy sauce to control salt levels.
- Polenta thickens as it cools; add a splash of broth to loosen if needed.
- Lamb chops can also be grilled instead of pan-seared.
- Substitute pecorino cheese for a sharper flavor.
